The term “blood sugar levels” refers to the amount of sugar floating around in your blood at any given time. The Body’s Control over Blood Sugar Levels

The bloodstream acts as a vehicle to carry oxygen and nutrients, including glucose, to cells and organs around the body. Glucose is the primary fuel used by the body to create energy, and as such, there will be some glucose travelling around the body at all times. After we eat, glucose from the breakdown of food, specifically carbohydrates, is absorbed into the bloodstream through the wall of the intestine. This leads to a subsequent rise in the levels of glucose in the blood following meals. To counteract this increase, the pancreas produces the hormone insulin. Insulin acts like a key, opening the way for glucose from the blood to enter cells where it can be used for energy production or stored for later use.

The amounts by which our blood sugar levels fluctuate depend on what, and when we eat. For instance, if we eat a meal high in sugar (such as white pasta, white bread, and many cereals to name a few examples), this causes a rapid increase in the amount of sugar present in the blood. This prompts the body to produce more insulin in a bid to overcome hyperglycaemia (high blood sugar levels). When refined carbohydrates and sugary foods are consumed on a regular basis, year after year, a dangerous cascade occurs. Insulin levels remain chronically high, and cells become less responsive to the effects of insulin. As a consequence, the body has difficulty adequately managing blood glucose levels.
