Vegetable broths are excellent for alkalinising the body during any disease state. As most illnesses are classified as an 'acid' condition, the inclusion of a broth containing strong alkalinising vegetables in a base of pure water is ideal for increasing the body's strength to disease, while at the same time reducing intestinal toxicity.
As the overall digestion process is somewhat compromised during stress and acute illness, this 'light' meal enables the body to collect nutrients for tissue renewal, without using great amounts of energy to digest solid foods.
Ideally organic or in season vegetables are best for a broth.
2 cups carrot tops
1 clove garlic
2 cups potato peelings (1/2" thick)
2 cups beet tops
2 cups celery tops
3 cups celery stalks
2 pints pure water
1/2 tsp celtic salt
1 carrot or onion to flavour
The stalks of all vegetables are used, as this is where the main nutrients are.
The ingredients of this broth should be finely chopped or put in a food processor. Bring to the boil slowly. Then simmer for approximately 20 minutes.
This broth is usually used during a fast. At this time, only the liquid is consumed and the rest of the broth is discarded.
For everyday use, you can use this "broth" as a healthy soup, without discarding anything. You may want to add selected herbs and spices to broaden the flavour and taste of the broth.
