Yeast-free bread solutions
These combinations are ideal for anyone wanting to increase their health.
Yeast-free bread
1 cup flour
1 tsp cream of Tartar
1 tsp baking soda
½ tsp salt
Stir these together in a bowl then add
2 cups wholemeal flour
2 cups milk
Mix all together - mixture will be fairly wet. Line loaf tin with baking paper. This is important otherwise the loaf will stick. Bake for 1 hour at 190C. Keep loaf in fridge.
Optional addition to yeast-free bread
½ cup kibbled wheat
½ cup bulgar wheat
½ cup linseeds
½ cup dried apricots
Gluten-free bread
1 cup of cornflour, fine
½ cup of grated carrot
½ cup of rice/soy/almond milk
1 tsp gluten free baking powder
2 tbsp olive oil
You may include dried tomato or olives if wanted
Mix dry ingredients then add wet ingredients and bake for 30-40 minutes at 180C.
Potato and pumpkin frittata (for 2 people)
Slice 1 good-sized potato thinly
3-4 chopped garlic cloves
Grate 1 cup pumpkin
4 beaten egg-yolks
Grate ½ cup cheese
Chopped fresh herbs for garnish
Slice 1 onion thinly
Pour just enough of the egg yolk to cover bottom of pie or flan dish. Layer potato slices, onion, cheese, garlic, pumpkin etc until all ingredients are used. Pour remaining egg yolk over top layer. Sprinkle with grated herbs and crushed almonds. Bake in oven at moderate temperature.
